Hello, I’m Daz,

I’m a chef, restaurateur, and adventurer based in Byron Bay, passionate about honest cooking, local produce, and good times around the table.

After starting out in Michelin starred kitchens in the UK and leading one of the world’s best restaurants at Tetsuya’s Sydney, I now co-own the award winning Three Blue Ducks group and Rocker Bondi. I’ve also had the privilege of hosting food shows, writing cookbooks, running pop-ups, and curating festivals, all with the same goal: connecting people through food.
