Hello, I’m Daz,

I’m a chef, restaurateur, and adventurer based in Byron Bay, passionate about honest cooking, local produce, and good times around the table.

After starting out in Michelin-starred kitchens in the UK and leading one of the world’s best restaurants at Tetsuya’s Sydney, I now co-own the award-winning Three Blue Ducks group and Rocker Bondi. I’ve also had the privilege of hosting food shows, writing cookbooks, running pop-ups, and curating festivals — all with the same goal: connecting people through food.
